This dish is a classic I’ve made many times. I first made it for my father-in-law when he came to visit and my husband came along later. I really wanted to do it for his birthday, but it was going to be too much work. This year it was perfect! I was able to use leftover lobster from a previous dinner for the sauce, but made it with the freshest lobster that I could find. I also wanted a lobster meat recipe.
The name “vallejo” comes from a word that means “valley” in Italian. I really liked the name and thought it was a great name. I also really liked the way it tied the end of the word and the fish-slaw.
I knew that I wanted to make the lobster meat sauce right out of the shell, so once I cracked the lobster open I found that all of the meat was squished so that was not a good sign (and was definitely not a good sign for the sauce). The meat itself was just as squished as the shell, but the sauce was much more enjoyable. The sauce is very sweet and fresh tasting, making it perfect for a dinner party.
The sauce is so good. I ate it with grilled shrimp and had an amazing lobster salad. It’s the perfect combination of sweet and salty. I love the fact that the sauce is so delicious.
